Ingredients

  • 1000 g beef roast (one whole piece for braising)
  • 100 ml red wine vinegar
  • 200 ml red wine
  • 100 g pitted prunes
  • 3 stk onions, roughly chopped
  • 2 stk carrots, sliced
  • 100 g bacon, diced
  • 2 spsk tomato paste
  • 4 stk whole cloves
  • 2 stk bay leaves
  • 0.5 tsk nutmeg, grated

Instructions

    Marinate the beef

    1. Stud the beef with cloves and make small incisions. Marinate in red wine vinegar overnight in the fridge.

    Brown and braise

    1. Remove the beef and pat dry. Brown on all sides in a pot. Cook bacon, onions and carrots in the same pot.
    2. Add tomato paste, red wine, prunes, marinade, bay leaves and nutmeg. Return the beef, cover and braise at 160 °C for about 3 hours.

    Serve

    1. Slice the beef and serve with the sauce and gnocchi or homemade pasta.

  • Start the marinade the night before — the time makes all the difference for the sweet-sour balance.
