Patatas bravas – crispy potatoes with bravas sauce
Golden, crispy potato cubes with a warm paprika-spiced tomato sauce and a touch of aioli. One of Spain's most popular tapas dishes — simple, satisfying, and easy to share.

Potatoes
- 800 g Potatoes, cut into 2–3 cm cubes
- 3 spsk Olive oil
- 0.5 tsk Salt
Bravas sauce
- 2 spsk Olive oil
- 2 stk Garlic cloves, finely chopped
- 1 spsk Smoked paprika (pimentón)
- 0.5 tsk Cayenne pepper (to taste)
- 400 g Canned crushed tomatoes
- 1 tsk Sugar
Instructions
- 1
Roast the potatoes
- Preheat the oven to 220 °C (425 °F).
- Toss the potato cubes in olive oil and salt on a baking tray. Roast for 25–30 min until golden and crispy. Turn them halfway.

Make the bravas sauce
- Heat olive oil in a small saucepan. Sauté the garlic for 1 min.
- Add smoked paprika and cayenne pepper, stir for 30 seconds.
- Pour in the crushed tomatoes and sugar. Let the sauce simmer for 10 min until thickened. Adjust seasoning.

Serve
- Place the crispy potatoes on a platter and spoon the bravas sauce over.

- • Firm-fleshed potatoes (e.g. baking potatoes) give the crispiest result.
Cooking
- • The oven gives even crispness without standing at the stove. Deep-fried is also common, but oven-roasted is easier for everyday.
