Pindjur – Macedonian vegetable relish

A slow-cooked relish of roasted peppers, eggplant, and tomatoes. Pindjur is also found in Serbia and neighbouring countries.

  • 6 stk Red bell peppers
  • 2 stk Eggplants
  • 800 g Tomatoes, roughly chopped
  • 4 fed Garlic, chopped
  • 80 ml Sunflower oil
  • 1 spsk Red wine vinegar

    Roast the vegetables

    1. Roast the peppers and eggplants at 230°C until their skins are dark and blistered. Cover, peel, and chop the flesh.

    Cook the relish

    1. Heat the oil in a wide pot. Add the garlic, tomatoes, and roasted vegetables.

    Reduce and season

    1. Simmer, stirring regularly, for 40–50 minutes. Season with vinegar, salt, and pepper.
