Suggestions
- • Make sure each plate gets sauce — it is half the dish.
Side Pairings
- • Boiled potatoes.
Storage
Fresh
- • Duration: 2 days
- • Temperature: 5°C
- • Method: Chill quickly. Refrigerate for up to 2 days.
Frozen
- • Duration: 2 months
- • Temperature: -18°C
- • Method: Freeze preferably without cream — or accept slightly changed texture. Thaw in the fridge.
Reheating
- • Stovetop: Warm gently. Avoid a hard boil so the meat does not dry out.
Tips
Preparation
- • Pound thick chops lightly so they cook evenly.
Cooking
- • Add cream late — it can split on long cooking.
Serving
- • A handful of fresh parsley on top brightens the plate.
Variations
Flavor
- A splash of soy or Worcestershire adds depth.
Health
- Use semi-skimmed milk plus a little crème fraîche instead of cream for a lighter sauce — add at the end.
Method
- Thin chops need less time. Check after 4 hours on LOW.
