Portuguese custard tarts with crisp puff pastry and creamy filling. Baked at high heat so the top gets caramelised spots.

- 1 rulle Puff pastry
- 2.5 dl Milk
- 1.5 dl Double cream
- 120 g Sugar
- 4 stk Egg yolks
- 2 spsk Cornstarch
- 1 tsk Vanilla extract
- 1 strimmel Lemon peel

Make the custard
- Heat milk, cream, sugar and lemon peel. Whisk egg yolks and cornstarch together. Slowly pour the milk mixture in while whisking. Return to the pot and stir over low heat until thick. Add vanilla. Cool.

Shape and bake
- Roll the puff pastry tightly into a log. Cut into 12 slices. Press each slice into a muffin tin with your fingers. Fill with custard (two-thirds full).
- Bake at 250 °C (or as high as your oven goes) for 12–15 minutes until the top has dark spots and the base is crisp.
