    Cut the vegetables

    1. Peel the potatoes and carrots.
    2. Cut them into thin, even slices (about 2 mm).

    Sauté onion and garlic

    1. Heat the olive oil in a pot over medium heat.
    2. Sauté the onion and garlic for 3 minutes until translucent and soft – not browned.

    Add coconut milk and spices

    1. Pour the coconut milk into the pot.
    2. Add nutmeg, salt, pepper, thyme and paprika.

    Assemble the gratin

    1. Lightly grease an ovenproof dish.
    2. Layer the potatoes and carrots in the dish.
    3. Pour the coconut mixture evenly over.

    Bake the gratin

    1. Cover the dish with foil and bake for 30 minutes at 200°C / 400°F.
    2. Remove the foil, sprinkle with cheese if using, and bake another 15 minutes.
