  • 1 stk Onion, chopped
  • 1 spsk Butter or oil
  • 1 l Vegetable stock
  • 1 dl Heavy cream or milk

  • 0.5 tsk Freshly ground pepper

    Sauté the vegetables

    1. Melt the butter in a pot and cook the onion and leeks for 3–4 minutes until soft.
    2. Do not let them brown; they should simply turn translucent.

    Add potatoes and stock

    1. Add the potatoes and pour in the stock. Cook for 20 minutes, until the potatoes are completely tender.
    2. Cover with a lid to keep in the steam.

    Blend the soup

    1. Blend the soup with an immersion blender until completely smooth. Stir in the cream and season with salt and pepper.
