Poutine recipe – Canadian fries with cheese and gravy | Nordmad

Québécois comfort food: crispy fries topped with mozzarella and rich homemade gravy. Adapted with mozzarella since cheese curds are hard to find in the Nordics.

    • 1.8 lb potatoes, peeled
    • 3 tbsp olive oil
    • 1 tsp salt
    • ½ tsp paprika
  • Gravy

    • 2 tbsp butter
    • 2 tbsp all-purpose flour
    • 2⅛ cup beef broth
    • 1 tbsp Worcestershire sauce
    • ½ tsp black pepper
  • Topping

    • 8.8 oz mozzarella, diced

    Prepare the potatoes

    1. Cut potatoes into thick sticks (about 1 cm). Rinse in cold water and dry thoroughly.
    2. Toss potatoes with oil, salt and paprika on a baking tray.

    Bake the fries

    1. Bake at 220 °C for 25-30 minutes. Flip halfway through.

    Make the gravy

    1. Melt butter in a saucepan. Stir in flour and cook for 1 minute.
    2. Add broth gradually, whisking as you go. Bring to a boil and simmer for 5 minutes until thickened. Season with Worcestershire sauce and pepper.

    Assemble the poutine

    1. Divide hot fries between plates. Top with mozzarella cubes and pour hot gravy over so the cheese begins to melt.
