- 1 stk onion
- 2 fed garlic
- 0.5 stk red chili (seeds removed)
- 2 stk carrots
- 1 spsk olive oil
- 800 ml vegetable stock
- 100 ml coconut milk
- 1 spsk lime juice
- 1 tsk salt
- 1 knsp black pepper

Prep the vegetables
- Cut the pumpkin into coarse cubes (keep the skin on hokkaido).
- Peel and slice the carrots.
- Chop the onion coarsely and finely slice the garlic and chili.

Sauté onion, garlic and chili
- Heat the olive oil in a pot over medium heat.
- Sauté onion, garlic and chili until the onion is soft and translucent.

Cook the soup
- Add pumpkin, carrots and vegetable stock.
- Simmer covered until the vegetables are fully tender (about 15–20 minutes).

Blend the soup
- Blend the soup until completely smooth and creamy, right in the pot.
