Quesadillas
- 4 stk large flour tortillas
- 7.1 oz shredded cheese (mozzarella or cheddar)
- 1 stk red bell pepper, sliced
- 0.5 stk red onion, thinly sliced
- 1 tbsp oil

Prepare the filling
- Heat a little oil in a pan and sauté peppers and onion for 3-4 minutes until softened. Remove from pan and set aside.

Cook the quesadillas
- Place a tortilla in a dry, hot pan. Spread cheese and filling on one half. Fold the other half over.
- Cook for 2-3 minutes on each side over medium heat until the tortilla is golden and the cheese has melted.
- Repeat with the remaining tortillas. Cut into wedges and serve immediately.
