Cordial
- 1.1 lb raspberries (fresh or frozen)
- 2⅛ cup water
- 10.6 oz sugar
- 1 tbsp lemon juice

Boil the raspberries
- Put raspberries and water in a pot.
- Bring to a boil and let it simmer 10–15 minutes, until the berries are completely soft.

Strain and clarify
- Pour the hot berry mixture through a fine sieve (or cloth) over a clean pot.
- Let it drip without pressing if you want a clearer cordial.

Sweeten, add lemon and bottle
- Gently warm the cordial and stir in sugar and lemon juice until the sugar dissolves.
- Cool slightly and pour into clean bottles.
