A full-flavored, creamy red pesto made with sun-dried tomatoes, garlic, Parmesan and toasted almonds. Good with pasta, bread, sandwiches and marinades.

  • Base

    • 150 g Sun-dried tomatoes in oil (drained – save the oil)
    • 40 g Toasted almonds
    • 40 g Grated Parmesan
    • 1 fed Garlic
    • 1 håndfuld Fresh basil
  • Flavor and balance

    • 1 spsk Tomato purée
    • 0.5 stk Lemon (juice)
    • 1 tsk Balsamic vinegar
    • 0.5 tsk Salt
    • 0.3 tsk Black pepper
  • Oil

    • 40 ml Oil from the jar of sun-dried tomatoes
    • 40 ml Olive oil (extra virgin)

    Prep (and toast if needed)

    1. If the almonds are not toasted: toast them 2–3 minutes in a dry pan until fragrant. Cool for 1 minute.
    2. Drain the tomatoes and save the oil from the jar.
    3. Peel the garlic and grate the Parmesan if it is not already grated.

    Chop the base coarsely

    1. Put tomatoes, almonds, Parmesan and garlic in the food processor.
    2. Pulse 6–10 times to a coarse mixture (it gives better texture than blending everything smooth at once).

    Season and make it creamy

    1. Add tomato purée, lemon juice, balsamic, salt, pepper and basil.
    2. Blend briefly, and pour in the oil a little at a time, until the pesto is creamy but still has some structure.
    3. Taste: more lemon for freshness, more Parmesan for umami, or a pinch of salt if it needs lift.

    How to use it (the pasta trick)

    1. For pasta: stir 2–3 spsk of pesto into hot pasta and add 2–4 spsk of pasta water for a glossy, creamy sauce.
    2. For bread/sandwiches: use the pesto as a spread and top with mozzarella, tomato or grilled vegetables.
