    • 1.1 lb Rhubarb, sliced

    • 10.6 oz Sugar
    • 1 tsp Vanilla sugar (optional)

    Cook the rhubarb

    1. Put rhubarb and water in a pot.
    2. Bring to the boil and simmer for 10–15 minutes until the rhubarb is completely soft.

    Strain the juice

    1. Pour the mixture through a fine sieve into a clean pot.
    2. Let the juice drip through without pressing for a clearer cordial.
