  • 2 tbsp Coarse salt
  • 3 stk Bay leaves
  • 5 stk Whole cloves
  • about 0.8 cup Water

    Prepare the roast

    1. Score the rind all the way through to the meat, if not already done.
    2. Avoid cutting into the meat, as this prevents crispness. Pat the roast dry with kitchen paper.

    Season and prepare

    1. Rub the rind thoroughly with coarse salt and a little pepper. Make sure the salt gets well into the scores.
    2. Place bay leaves and cloves evenly between the rind scores.

    Place the roast in a dish

    1. Place the roast on a rack over an oven-proof dish with 2 dl water in the bottom.
    2. Make sure the rind lies completely level – use a potato slice under the roast to adjust if needed.

    Roast the pork

    1. Roast at 200°C fan for 1½ hours, or until the core temperature reaches 65–70°C.
    2. If the crackling is not crisp, give it an extra 5–10 minutes at 225°C with the grill function.

    1. Remove the roast and let it rest uncovered for 10 minutes.
