    • 1.3 lb beetroot
    • 2 tbsp olive oil
    • ½ tsp salt
    • ¼ tsp freshly ground pepper
  • Dressing and topping

    • 1 tbsp lemon juice
    • 1 tsp honey (optional)
    • 3.5 oz cream cheese (such as soft cheese or goat's cheese)
    • 1 bundt fresh herbs (such as parsley, dill or thyme)

    Heat the oven and prepare

    1. Heat the oven to 200 °C, conventional.

    Prepare the beets

    1. Rinse and peel the beets (gloves help – they stain).
    2. Cut into even wedges or dice so they roast evenly.
    3. Put the beets in a bowl.

    Toss with oil and seasoning

    1. Add olive oil, salt and pepper to the bowl.
    2. Toss well so every piece is coated.

    Roast the beets

    1. Spread on the tray in one layer with a little space between.
    2. Roast in the middle of the oven for about 35–40 minutes, until tender and lightly caramelised.
    3. Turn after about 20 minutes for even roasting.

    Prepare herbs and lemon dressing

    1. Chop the herbs roughly (save some for garnish).
    2. Stir lemon juice with honey, if using.
    3. Taste the dressing: more lemon for brightness, more honey for roundness.

    Plate the salad

    1. Lay the warm beets on a platter or flat plate.
    2. Dot cream cheese over the top.
    3. Drizzle with the lemon dressing and top with herbs (and a little extra pepper if you like).
