Roasted peppers
- 3 stk red bell peppers
- 3 tbsp oil
- ½ tsp salt
Hummus
- about 1.1 lb chickpeas from a tin, rinsed
- about 0.4 cup oil
- 1 fed garlic
- ½ tsp cumin
- ½ tsp salt
- 1 tbsp lemon juice
Instructions

Roast the peppers
- Cut the peppers into rough pieces and lay them on a baking tray.
- Toss with oil and sprinkle with a little salt.
- Roast at 200 °C for about 20–25 minutes, until tender and lightly caramelised.

Blend the hummus
- Put the roasted peppers, chickpeas, oil and garlic in a blender or food processor.
- Add cumin, salt and lemon juice.
- Blend until smooth and creamy.
- Taste and adjust with more lemon juice or salt if needed.
