- 6 stk ripe tomatoes
Herb butter
- 1.4 oz butter
- 1 bundt fresh herbs (such as thyme, parsley or basil)
- ½ tsp salt
- ¼ tsp freshly ground pepper
To serve
- 3.5 oz cream cheese (such as soft cheese or goat's cheese)
- 1 tbsp olive oil

Prepare the tomatoes
- Halve the tomatoes and lay them cut-side up in an ovenproof dish.

Make the herb butter
- Chop the herbs finely and mix with soft butter, a little salt and pepper.

Roast the tomatoes
- Dot herb butter over the tomatoes. Roast at 180 °C for about 25 minutes, until soft and lightly caramelised.

Finish with cream cheese
- Take the tomatoes from the oven and top with small dots of cream cheese. Scatter extra herbs if you like, and drizzle with a little olive oil.
