    • 1 spsk Butter or oil for searing

    1. Pat the culotte dry with paper towels.
    2. Lightly score the fat cap in a diamond pattern without cutting into the meat.

    Sear the culotte

    1. Heat a skillet well with butter or oil.
    2. Sear the culotte on all sides until it is well browned.

    Set up the slow cooker with a rack

    1. Place the rack in the slow cooker.
    2. Pour the beef broth into the bottom so the liquid stays below the rack.
