- 7.1 oz chorizo
- 5.3 oz morcilla or mild blood sausage
- 5.3 oz smoked bacon or pancetta
- 1 stk onion
- 3 fed garlic
- ¼ tsp saffron
- 1 tsp paprika
- 1 stk bay leaf
- 1 tsp salt
- ½ tsp freshly ground black pepper
- 6⅓ cup water

Prepare the ingredients
- Rinse the soaked beans.
- Chop the onion and garlic.
- Cut the bacon into large pieces.

Start the stew
- Put the beans, onion, garlic, bacon, chorizo, blood sausage, bay leaf, paprika and saffron in a large pot.
- Cover with water by 2–3 cm.
- Bring to a boil and skim off the foam.

Simmer
- Reduce to low heat.
- Simmer for 1½–2 hours with the lid ajar until the beans are completely soft.
- Stir gently from time to time so the beans do not break apart.
- Add more hot water if it becomes too dry.

Season and serve
- Lift out the sausages, slice them and return them to the pot.
- Season with salt and pepper.
- Let the stew rest for 10 minutes before serving so the sauce can thicken.
