Spiced chicken
- 1.3 lb chicken breast
- 1 tbsp olive oil
- 1 tsp paprika
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1 knsp black pepper
Roasted vegetables
- 1.1 lb potatoes
- 10.6 oz carrots
- 2 stk red onion
- 1 tbsp olive oil
Yoghurt dressing
- 7.1 oz skyr or plain yoghurt
- 1 stk lemon
- 1 håndfuld fresh parsley

Prepare the vegetables
- Cut potatoes and carrots into rough chunks and red onion into wedges. Toss with half the oil, salt and pepper.

Roast the vegetables
- Roast the vegetables in the middle of the oven until they begin to soften.

Season the chicken
- Toss the chicken breasts with the remaining oil, paprika, cumin, garlic powder, salt and pepper.

Finish roasting the chicken and vegetables
- Place the chicken on top of the vegetables and roast until the chicken is cooked through and juicy.

Mix the dressing
