  • Spinach pancakes

    • 3.5 oz Fresh spinach
    • 3 stk Eggs
    • about 0.8 cup Milk
    • about 0.6 cup Wheat flour
    • ½ tsp Salt
    • 1 tbsp Butter for frying
  • Filling

    • 5.3 oz Cream cheese
    • 1 stk Red bell pepper in strips
    • 1 stk Avocado in slices
    • 0.5 stk Cucumber in sticks
    • 1 håndfuld Fresh rocket

    Blend the spinach

    1. Blend spinach, eggs and milk into an even green mixture.

    Finish the batter

    1. Add the flour and salt, and whisk to a smooth batter without lumps.

    Fry one at a time

    1. Melt a little butter in a pan over medium heat.
    2. Pour a portion of batter into the pan and spread it thinly.
    3. Fry the pancake 1–2 minutes per side until lightly golden.
    4. Repeat with the remaining batter.

    Add the filling

    1. Spread a layer of cream cheese on each pancake.
    2. Add the pepper, avocado, cucumber and rocket on top.
    3. Roll the pancakes up and cut them in half if you like.

    1. Let the pancakes rest briefly before serving so the filling settles.
