Chicken curry
- 600 g chicken thighs, cut into pieces
- 4 dl coconut milk
- 1 stk onion, chopped
- 3 fed garlic cloves, finely chopped
- 1 spsk fresh ginger, grated
- 2 spsk curry powder (dark roasted)
- 1 tsk turmeric
- 1 tsk cinnamon stick, broken
- 10 stk curry leaves
- 2 stk pandan leaves (optional)
- 1 stk tomato, chopped
- 2 spsk coconut oil
- 1 tsk salt
Instructions

Marinate the chicken
- Mix the chicken pieces with curry powder, turmeric and a pinch of salt. Let them rest for at least 10 minutes.

Fry the aromatics
- Heat coconut oil in a heavy-bottomed pot. Add cinnamon stick, curry leaves and pandan leaves. Fry for 30 seconds.
- Add onion and fry for 5 minutes until soft. Add garlic and ginger, fry for 1 more minute.

Cook the curry
- Add the chicken and tomato. Fry for 5 minutes until the chicken is browned.
- Pour in the coconut milk and bring to a boil. Cover and simmer for 25-30 minutes until the chicken is tender and the sauce has thickened.
- Season with salt and serve with rice.
