  • 14.1 oz small potatoes
  • 7.1 oz pasta (e.g. penne or fusilli)
  • 8.8 oz sausages (e.g. chorizo, bratwurst or regular)
  • 4 stk eggs
  • 1 stk onion
  • 1 fed garlic
  • 1 stk bell pepper
  • 5.3 oz cherry tomatoes
  • 3.5 oz spinach
  • 2 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • 3 cup water or vegetable stock
  • 1 håndfuld fresh parsley

    Prepare the ingredients

    1. Dice the potatoes, slice the sausages and cut the vegetables into smaller pieces. Chop the onion and garlic.

    Start the pot

    1. Heat the olive oil in a large pot. Fry the sausages for a couple of minutes until they take on colour. Add onion and garlic and fry for another 2 minutes.

    Add potatoes and pasta

    1. Add potatoes, pasta and water/stock to the pot. Stir and simmer covered for 10–12 minutes until pasta and potatoes are tender.

    Add the vegetables

    1. Fold in the pepper, tomatoes and spinach. Season with salt and pepper. Simmer for 2–3 minutes.

    Finish with eggs

    1. Crack the eggs directly into the pot and put the lid on. Let them poach in the steam for 3–4 minutes until the whites are set but the yolks are still soft.

    Serving

    1. Sprinkle with fresh parsley and serve straight from the pot – warm, informal and full of flavour.
