- 800 g 800 g ripe tomatoes
- 2 stk 2 carrots, peeled and sliced
- 1 stk 1 onion, chopped
- 3 fed 3 garlic cloves, finely chopped
- 1 spsk 1 tbsp tomato paste
- 800 ml 800 ml vegetable stock
- 1 dl 100 ml cream or coconut milk
- 2 spsk 2 tbsp olive oil
- 1 tsk 1 tsp honey
- 1 tsk 1 tsp salt
- 0.5 tsk 1/2 tsp black pepper
- 1 stk 1 baguette
- 50 g 50 g butter
- 1 håndfuld 1 handful fresh parsley
- 1 håndfuld 1 handful fresh basil
Instructions

Roast the tomatoes and carrots
- Place the tomatoes and carrots on a baking tray with a little oil, salt and pepper. Roast for 20 minutes at 200°C.
- This brings out the vegetables’ natural sweetness.

Sauté the onion and garlic
- Cook the onion and garlic in olive oil in a pot until soft and translucent.
- Do not let the garlic brown.

Simmer the soup
- Add the roasted tomatoes, carrots, tomato paste and stock. Simmer for 15 minutes.
- Stir occasionally so it does not catch on the bottom.

Blend and season
- Blend the soup smooth with an immersion blender. Add the cream and honey, then season with salt and pepper.
- The soup should be velvety and gently sweet without feeling heavy.

Make the garlic baguette
- Mix the butter with crushed garlic and a little salt. Spread over baguette slices and bake for 8 minutes at 200°C.
- Top with a little parsley if you like.

Serve
- Serve the soup with a spoonful of cream, fresh basil and warm garlic bread.
- A drizzle of olive oil makes a lovely finish.
