Tarte Tatin – upside-down apple tart
An upside-down apple tart with caramelised apples and puff pastry. The apples cook in caramel before the pastry is placed on top, and the tart is flipped after baking.

- 6 stk Apples (firm, e.g. Cox), peeled and halved
- 80 g Sugar
- 50 g Butter
- 1 plade Puff pastry (round, about 24 cm)
Instructions

Make caramel
- Melt sugar and butter in an oven-safe pan (about 24 cm) over medium heat. Stir gently until it is golden caramel.
- Place the apple halves closely with the rounded side down in the caramel. Let them cook for 10 minutes.

Bake the tart
- Lay the puff pastry over the apples and tuck the edges down along the pan. Poke a few holes in the pastry.
- Bake at 200 °C for 20–25 minutes until the pastry is golden and crisp. Let it stand for 5 minutes. Carefully flip it onto a serving plate.
