  • 2 fed garlic
  • 2 stk carrots
  • 1 stk red bell pepper
  • 7.1 oz broccoli
  • 2 tbsp curry powder
  • 1⅔ cup coconut milk
  • about 0.8 cup vegetable stock
  • 2 tbsp oil for frying
  • 1 stk lime
  • 1 tsp salt
  • ½ tsp freshly ground pepper
  • 1 håndfuld fresh coriander (for garnish)

    Fry vegetables

    1. Heat oil in a pot and soften onion and garlic.
    2. Add curry powder and stir for 1 minute.

    Add vegetables and liquid

    1. Add carrots and pepper and fry for 2 minutes.
    2. Pour in coconut milk and stock. Bring to a boil and simmer for 15 minutes.

    1. Add broccoli for the last 5 minutes so it keeps its bite.
