- 2 stk Carrots
- 1 stk Red bell pepper
- 2 fed Garlic
Flavour and liquid
- 1⅔ cup Coconut milk
- 1 dåse Chopped tomatoes
- 2 tbsp Yellow curry paste or powder
- 1 tbsp Freshly grated ginger
- about 0.8 cup Vegetable stock
- 1 tsp Salt
- 1 tsp Pepper
- 2 tbsp Oil
Instructions

Prep the vegetables
- Chop the onion and garlic, and cut the carrots and pepper into chunky pieces.
- It does not matter if the pieces are rustic.

Sweat the vegetables
- Heat oil in the pot over the embers and sweat the onion, garlic and ginger.
- Stir calmly so nothing takes too hard a heat.

Add spice and liquid
- Stir in the curry, then add tomatoes, stock and coconut milk.
- Let it come together before adding the chickpeas.
