- 1 stk onion, chopped
- 1 stk green bell pepper, chopped
- 2 stk celery, chopped
- 3 fed garlic
- 2 stk carrots, sliced
- 1 stk zucchini, diced
- 200 g okra
- 240 g kidney beans, rinsed
Base
- 400 g canned chopped tomatoes
- 7 dl vegetable stock
- 1 spsk tomato paste
Seasonings
- 2 tsk paprika, preferably smoked
- 1 tsk thyme
- 1 tsk oregano
- 0.5 tsk cayenne pepper
- 1 stk bay leaf
- 1 tsk salt
- 1 knsp black pepper
To serve
- 300 g rice

Prepare the vegetables
- Chop the onion, bell pepper, and celery.
- Cut the carrots and zucchini into suitable pieces.

Assemble the gumbo
- Put all ingredients except the rice in the slow cooker.
- Stir well.

- Cook for 8 hours on LOW.
