- 600 g Watermelon
- 150 g Feta cheese
- 1 bundt Fresh mint
- 0.5 stk Cucumber
Dressing
- 1 stk Lime
- 1 spsk Olive oil
- 0.3 tsk Salt
- 0.3 tsk Freshly ground pepper

Prep fruit and vegetables
- Cut the watermelon into bite-size cubes and remove any seeds.
- Cut the cucumber into half-moons for a little extra crunch.
- Chop the mint coarsely, or pick the leaves if they are small and tender.

Mix the light dressing
- Squeeze the lime juice into a small bowl.
- Stir in olive oil, salt and pepper until the dressing comes together.
- Taste – it should be fresh and lightly tangy.

- Put watermelon and cucumber in a large bowl.
- Crumble the feta over and add the mint.
- Drizzle with the dressing and toss gently so the watermelon keeps its shape.
