Crisp fritters of whole whitebait fish, egg and a squeeze of lemon — a prized seasonal classic from New Zealand's west coast rivers. A substitute is fine if whitebait is unavailable.

- 8.8 oz Whitebait (or small smelts / finely chopped white fish)
- 2 stk Eggs, lightly beaten
- 1 tsp Salt and white pepper
- about 1.1 oz Butter for frying
- 1 stk Lemon, in wedges

Gently mix whitebait (or substitute) with eggs
- Gently mix whitebait (or substitute) with eggs, salt and pepper. Don't over-mix — the fish should hold its shape.

Melt butter in a pan over medium heat
- Melt butter in a pan over medium heat. Drop spoonfuls of the mixture into the pan and press flat gently.

Fry 2–3 min per side
- Fry 2–3 min per side until golden and set. Serve immediately with lemon.
