Grilled chicken skewers with homemade tare sauce of soy, mirin, and sugar. Inspired by Japanese street food – pan-fried or grilled, juicy and caramelized.

Chicken skewers
- 600 g boneless chicken thighs, cut into 3 cm pieces
- 4 stk green onions, cut into 3 cm pieces
- 12 stk bamboo skewers (soaked in water)
Tare sauce
- 4 spsk soy sauce
- 3 spsk mirin
- 2 spsk sugar
- 1 spsk sake (or dry sherry)

Make tare sauce
- Combine soy sauce, mirin, sugar, and sake in a small saucepan. Bring to a boil and reduce on medium heat for 3-4 minutes until slightly syrupy.

Assemble the skewers
- Thread chicken pieces and green onion pieces alternately onto the skewers. About 4-5 chicken pieces per skewer.

Grill the skewers
- Heat a grill pan or skillet over high heat. Cook the skewers 3-4 minutes per side.
- Brush with tare sauce during the last 2 minutes. Flip and brush both sides. Serve with extra sauce and a sprinkle of sesame seeds.

- • Method: Store skewers and sauce separately in the fridge. Reheat in the oven at 200°C for 5 minutes.
Tips
Preparation
- • Soak bamboo skewers in water for at least 20 minutes so they don't burn on the grill.
Cooking
- • Brush with sauce in the last 2 minutes – too early and the sugar will burn.
Serving
- • Serve with steamed rice, a cold beer, and optionally a crispy Japanese cucumber salad on the side.
