How to fry onions until soft

Quick answer

Cut the onion into thin, even wedges. Cook in 1 tbsp fat over medium-low heat for 8–12 minutes, stirring regularly, until soft and translucent — not browned.

These steps assume

  • The onion is cut into even wedges about 3–4 mm thick.
  • One large onion is cooked in a 24–28 cm pan without a deep, crowded layer.
  • Medium-low heat means gentle cooking with no smoke or hard browning.

What you need

  • 1 large onion
  • 1 tbsp oil or butter
  • 24–28 cm frying pan
  • Sharp knife and cutting board
  • Wooden spoon or spatula

Step by step

  1. 1

Halve and peel the onion. Cut from root to tip into even wedges about 3–4 mm thick.

    • Equipment: Sharp knife and cutting board.
    • Heat: No heat.
    • Time: 2–3 minutes.
    • Looks like: The wedges are roughly the same thickness.
    • If it goes wrong: Very uneven thickness — split the thickest wedges so they cook at the same rate.
    • Done when: The onion is ready in thin, even wedges.
  2. 2

Heat 1 tbsp oil or butter in the pan and spread the fat across the base.

    • Equipment: 24–28 cm frying pan.
    • Heat: Medium-low heat.
    • Time: 30–60 seconds.
    • Looks like: Oil flows easily or butter foams gently; the fat is not smoking.
    • If it goes wrong: Smoke or dark butter — remove the pan, wipe it out and restart over lower heat.
    • Done when: The fat is hot and evenly spread without smoking.
  3. 3

Add the onions, spread them in an even layer and stir every 1–2 minutes.

    • Equipment: Wooden spoon or spatula.
    • Heat: Medium-low heat throughout.
    • Time: 8–12 minutes.
    • Looks like: After about 4 minutes the onions collapse; at 8–12 minutes they are soft and translucent without browning.
    • If it goes wrong: Edges brown too quickly — lower the heat, add 1 tbsp water and loosen the darkening spots.
    • Done when: No raw, crunchy center; the onions are soft and translucent.
  4. 4

Remove the soft onions from the heat. Continue only if you intentionally want light, even browning.

    • Equipment: Spatula and serving bowl.
    • Heat: Off for soft onions; medium for intentional light browning.
    • Time: Immediately, or 2–4 extra minutes for light browning.
    • Looks like: Soft onions are evenly translucent; browned onions are golden across the surface, not black at the edges.
    • If it goes wrong: Black edges and a bitter smell — remove the burnt pieces; they cannot be softened away.
    • Done when: The chosen result is reached without burnt pieces.

If it doesn't turn out as expected

  • Burnt edges while the center is raw

lower the heat and cut the onion more evenly next time.

  • Onions simmer in liquid

use a larger pan and keep them in one even layer.

  • Onions dry out

add a small amount of fat or 1 tbsp water and lower the heat.

  • Still not soft after 12 minutes

cover for 1–2 minutes over low heat, then check again.

Food safety

Lower the onions into the fat close to the pan to avoid splashes of hot fat.

When it's done: The onions are soft and translucent, with no raw, crunchy center or dark edges.
