    • 14.1 oz Dried pasta (e.g. penne or fusilli)
    • 1 tbsp Salt for the cooking water
  • Vegetables

    • 2 tbsp Butter or oil
    • 1 stk Onion, finely chopped
    • 2 fed Garlic, finely chopped
    • 2 stk Carrots, coarsely grated
    • 3.5 oz Kale or spinach, coarsely chopped
  • Creamy sauce

    • about 1.1 cup Double cream
    • about 0.4 cup Water or vegetable stock
    • 2.6 oz Grated cheese
  • Seasoning

    • ½ tsp Salt
    • ¼ tsp Freshly ground pepper
    • 1 skv Lemon juice
    • 1 bundt Fresh herbs (parsley or chives)

    Cook the pasta

    1. Cook the pasta in plenty of salted water until al dente. Reserve some cooking water and drain the rest.

    Fry the vegetables

    1. Heat butter or oil in a large pan. Softly fry the onion and garlic. Add the carrots and fry briefly.

    Make the sauce

    1. Add the cream and water/stock. Let it simmer for a few minutes. Fold in the kale or spinach until wilted.

    Melt in the cheese

    1. Turn down the heat and stir in the cheese until the sauce is smooth. Season with lemon, salt and pepper.

    Toss the pasta

    1. Toss the pasta in the sauce. Adjust with a little cooking water until creamy. Serve with fresh herbs.
