- 14.1 oz Dried pasta (e.g. penne or fusilli)
- 1 tbsp Salt for the cooking water
Vegetables
- 2 tbsp Butter or oil
- 1 stk Onion, finely chopped
- 2 fed Garlic, finely chopped
- 2 stk Carrots, coarsely grated
- 3.5 oz Kale or spinach, coarsely chopped
Creamy sauce
- about 1.1 cup Double cream
- about 0.4 cup Water or vegetable stock
- 2.6 oz Grated cheese
Seasoning
- ½ tsp Salt
- ¼ tsp Freshly ground pepper
- 1 skv Lemon juice
- 1 bundt Fresh herbs (parsley or chives)

Cook the pasta
- Cook the pasta in plenty of salted water until al dente. Reserve some cooking water and drain the rest.

Fry the vegetables
- Heat butter or oil in a large pan. Softly fry the onion and garlic. Add the carrots and fry briefly.

Make the sauce
- Add the cream and water/stock. Let it simmer for a few minutes. Fold in the kale or spinach until wilted.

Melt in the cheese
- Turn down the heat and stir in the cheese until the sauce is smooth. Season with lemon, salt and pepper.

Toss the pasta
- Toss the pasta in the sauce. Adjust with a little cooking water until creamy. Serve with fresh herbs.
