Homemade strawberry syrup

A concentrated, sweet strawberry syrup with fresh berry flavor. Good in drinks, desserts and pancakes, or stirred into cold summer drinks.

  • Syrup

    • 300 g Strawberries (fresh or frozen)
    • 200 g Sugar
    • 1 dl Water
    • 1 spsk Lemon juice

    Cook the strawberries

    1. Put strawberries, sugar and water in a pot.
    2. Bring to a boil and simmer for 8–10 minutes, until the berries are soft.

    Strain and reduce

    1. Strain the syrup through a fine sieve and discard the berry pulp.
    2. Pour the syrup back into the pot and simmer gently for a few minutes, until it thickens slightly.
    3. Stir in the lemon juice and let the syrup cool.
