Carrots
- 1.8 lb Carrots, peeled and cut into sticks or halved lengthwise
Marinade and seasoning
- 2 tbsp Olive oil or another mild oil
- 2 tbsp Honey
- 2 tbsp Lemon, juice only
- 4 kviste Fresh thyme sprigs (or 1 tsp dried thyme)
- ½ tsp Salt
- ¼ tsp Freshly ground pepper

Prepare the carrots
- Peel and cut the carrots
- Preheat the oven to 200°C. Peel the carrots and cut them into sticks or halve them lengthwise, depending on size, so they are roughly the same thickness.

Toss the carrots with honey, oil and lemon
- Mix the marinade and toss the carrots
- Place the carrots in a bowl or directly on a baking tray. Drizzle with oil, honey and lemon juice. Sprinkle with salt, pepper and picked thyme leaves (or dried thyme). Toss well so the carrots are evenly coated.

Roast the carrots
- Roast in the oven until tender and lightly caramelised
- Spread the carrots in a single layer on a baking tray lined with parchment paper. Roast in the middle of the oven for about 20–25 minutes, until tender with a slight bite and lightly coloured at the edges. Turn them once halfway through if you like.

Season and serve
- Season and arrange
- Take the carrots out of the oven. Taste and adjust with extra lemon, salt or honey if you want more acidity or sweetness. Arrange on a serving dish and garnish with a few fresh thyme sprigs if you like.
