Caramelised onions
- 3 stk large onions
- 0.9 oz butter
- 1 tbsp brown sugar
- 1 tbsp balsamic vinegar
- 1 knsp salt
Patties
- 1.1 lb minced beef (10–12% fat)
- 1 tsp salt
- ½ tsp freshly ground pepper
- 1 tbsp butter or oil for frying
Burger
- 4 stk brioche or burger buns
- 4 skiver cheddar cheese
- 2 tbsp mayonnaise or aioli
- 1 tsp mustard (optional)
- 4 blade lettuce (e.g. gem lettuce or lamb's lettuce)
- 1 stk sliced tomato
- 4 skiver pickled gherkins
Instructions

Make the caramelised onions
- Slice the onions thinly
- Put onions and butter in a pan and set to low heat
- Cook for 20 to 25 minutes, stirring regularly, until the onions are soft and golden
- Add brown sugar, balsamic vinegar and a pinch of salt, and let it caramelise for a couple of minutes

Shape the patties
- Divide the meat into 4 equal portions
- Shape into flat patties and press a small indent in the centre with your thumb
- Season with salt and pepper just before frying

Fry the patties
- Heat a pan on high and add butter or oil
- Fry the patties 3 to 4 minutes on the first side
- Flip and fry 2 to 3 minutes on the other side

Melt the cheese
- Place cheddar on the patties for the last 30 to 60 seconds
- Optionally cover the pan briefly so the cheese melts faster

Toast the buns
- Split the buns and toast them briefly in a dry pan
- Toast until lightly golden and warm

Assemble the burger
- Spread mayo and mustard, if using, on the bottom bun
- Add lettuce, tomato and pickled gherkins
- Top with the patty with cheese and a generous spoonful of caramelised onions
- Place the top bun on and serve straight away
