Juicy homemade burger with melted cheddar, crisp lettuce and sweet caramelised onions. A cosy classic that tastes of Friday evenings and comfort.

  • Caramelised onions

    • 3 stk large onions
    • 0.9 oz butter
    • 1 tbsp brown sugar
    • 1 tbsp balsamic vinegar
    • 1 knsp salt
  • Patties

    • 1.1 lb minced beef (10–12% fat)
    • 1 tsp salt
    • ½ tsp freshly ground pepper
    • 1 tbsp butter or oil for frying
  • Burger

    • 4 stk brioche or burger buns
    • 4 skiver cheddar cheese
    • 2 tbsp mayonnaise or aioli
    • 1 tsp mustard (optional)
    • 4 blade lettuce (e.g. gem lettuce or lamb's lettuce)
    • 1 stk sliced tomato
    • 4 skiver pickled gherkins

    Make the caramelised onions

    1. Slice the onions thinly
    2. Put onions and butter in a pan and set to low heat
    3. Cook for 20 to 25 minutes, stirring regularly, until the onions are soft and golden
    4. Add brown sugar, balsamic vinegar and a pinch of salt, and let it caramelise for a couple of minutes

    Shape the patties

    1. Divide the meat into 4 equal portions
    2. Shape into flat patties and press a small indent in the centre with your thumb
    3. Season with salt and pepper just before frying

    Fry the patties

    1. Heat a pan on high and add butter or oil
    2. Fry the patties 3 to 4 minutes on the first side
    3. Flip and fry 2 to 3 minutes on the other side

    Melt the cheese

    1. Place cheddar on the patties for the last 30 to 60 seconds
    2. Optionally cover the pan briefly so the cheese melts faster

    Toast the buns

    1. Split the buns and toast them briefly in a dry pan
    2. Toast until lightly golden and warm

    Assemble the burger

    1. Spread mayo and mustard, if using, on the bottom bun
    2. Add lettuce, tomato and pickled gherkins
    3. Top with the patty with cheese and a generous spoonful of caramelised onions
    4. Place the top bun on and serve straight away

  • Pan: Warm the patties briefly in a pan over medium heat until heated through (Medium heat)
  • Oven: Warm the buns for 3 to 5 minutes at 180°C so they crisp up again (180°C)

Tips

Preparation

  • Cut and prepare everything before you start frying
  • that way you can assemble while everything is hot
  • Make the caramelised onions well in advance

Cooking

  • Fry the patties in a really hot pan for a good crust
  • Keep the onions on low heat and stir regularly
  • that way they turn sweet without burning

Serving

  • Toast the buns so they hold up to juices and sauces
  • Serve with extra pickled gherkins and a bowl of mayo on the side
