- 14.1 oz Red cabbage, finely shredded
- 1 stk Pomegranate
- 1 stk Orange, in small pieces
- 1 håndfuld Fresh parsley or mint, chopped
- 1.8 oz Chopped roasted nuts (almonds or hazelnuts)
Dressing
- 2 tbsp Olive oil
- 2 tbsp Orange juice
- 1 tbsp Apple cider vinegar or white wine vinegar
- 1 tsp Honey
- ½ tsp Salt
- ¼ tsp Freshly ground pepper
Instructions

Shred and soften the red cabbage
- Shred the red cabbage as finely as possible with a sharp knife or mandoline.
- Place the cabbage in a large bowl.
- Sprinkle 1 small pinch of salt over (from the 0.5 tsp) and massage the cabbage for 30–60 seconds until it becomes shinier and slightly softer.

Prepare fruit, herbs and nuts
- Cut the orange into small bite-sized pieces and save some of the juice for the dressing.
- Remove the pomegranate seeds (tip: do it in a bowl so the juice does not splatter).
- Finely chop the parsley or mint.
- Roughly chop the roasted nuts if they are not already chopped.

Whisk the dressing
- Place olive oil, orange juice, vinegar and honey in a small bowl.
- Add the remaining salt and pepper.
- Whisk for 20–30 seconds until the dressing comes together and is lightly creamy.

Toss the salad together
- Pour the dressing over the red cabbage.
- Toss for 1 minute until the cabbage is evenly coated.
- Fold in the orange pieces, pomegranate seeds and herbs.

Top and serve
- Arrange the salad on a platter or in a bowl.
- Sprinkle nuts over just before serving.
- Taste and adjust: a little extra salt or a few drops of vinegar if you want more freshness.
